Odysseus

When   creating a wine such as Odysseus it is natural to think about how it will taste with food. We take great care of our wines and list below number of points that give us a unique style:

Odysseus- Production of grapes under full control (10-12 Hectoliters per Hectare).

- Perfect maturity and balance of the grapes

- Suitable alcohol content, not too high not too low. What is really important is that the grape is completely and fully mature (not over mature) even the skins.

- Carefull selection of the barrels: quality, origin, capacity, cooperage, toasted.

- Direct vinification in open barrels upright followed by constant stirring and battonage.

- Our wines are kept in barrel in a very controlled way. Transfer or movement the wine only if necessary. Wine will be taken off the barrels when the taste of the variety is evident avoiding overoaking. The wine has to taste of wine and not oak.

- No fining in the reds. Very slight filtering in order to keep the auntenticity of the product.

- Sterile bottling

- Our is to get a genuine, complex, elegant and solid product from our vineyards. We do not wish high graduation, extra wood taste or excessive astringency.

- We want more tannins from the same grapes, we do not want indirect agents to interfere
